Winner, winner, KABOOM chicken dinner!

Isn’t it everyone’s quest to find the perfect chicken wing? It’s also Bonus points if it’s Korean Fried Chicken (KFC), right?! I have a little secret to share, and you are in for some goodness coming your way.

I would like to introduce to you KABOOM Chicken. If you haven’t heard of it yet, you will soon. This family owned enterprise came into fruition when the mission to find that perfect wing was lacking in Toronto. Lucky for me, I got to chat with the KABOOM family and find out how this adventure unfolded.

1. I love chicken wings, especially Korean Fried Chicken wings. Can you tell me how you decided to take on this exciting venture?

We’re obsessed with Korean fried chicken wings, the crunchiness, and lightness of the crispy texture and flavours. We found quickly that we weren’t satisfied with many of the Korean fried chicken recipes  in the city of Toronto and that is was our very own family recipe that couldn’t be beat. We knew we had something special when friends would constantly request us to make it and that it had to be shared with Toronto! This city is full of diversity for a variety of wonderful cultural foods, and realized that it really needed a GREAT Korean fried chicken to add to the mix.

2. How much taste testing did you have to go through before you found the perfect recipe?

We ate so much fried chicken in the last year to perfect and refine our recipes, you’d think we’d be sick of it by now, but we’re not. Who gets sick of fried food? It’s really good. Our friends and family had countless taste test trials with us, we lost count.

 

3. How many taste testers did you recruit, and how many did you trust?

Everyone has different palettes. It was important for us to test with ‘Foodie Friends’ that were passionately picky with their tastes and understood the quality of food and flavours. Also, we trusted them to be directly honest with their feedback. With the high benchmark we set with those who are food enthusiasts,  we were confident that when we tested with others, that our food would get great reception. We were right with our approach as the feedback so far has been amazing.

4. The crunchy texture is such a vital part of the wing, how many tries did it take to get it right?

We played with many different types of starches. It was important for us to experiment to understand what properties would give us the texture we were looking for. We’ve done so many batches and different combinations we’ve lost count. In the end, it was well worth it.

5. Where can we find your KFC? And do you do cater?

This summer we’re debuting our Korean fried chicken and other great streets-style recipes to several food festivals in Toronto. Starting off with the Taste of Lawrence July 3-5 and also at the Matsuri Japanese summer culture festival on July 26. To find where else we will be, follow us on Facebook, Twitter or Instagram and we’ll be announcing other events we’ll be present!  After this summer, we’ll be looking for a Toronto location, that we’re very excited about and yes perhaps then we’ll start catering!
